It is absolutely delicious, my brother-in-law is a great cook and he taught me to cure meat about ten years ago, and now I do it quite often. Both with and without port wine, aquavit or Madeira. I cure salmon and trout too, any fat fish actually 😉

Add some herbs when curing salmon this way, lemon grass or even better dill 🙂
