A classic Norwegian lefse recipe found on brodogkorn.no
Soft lefse is soft and sweet and extra nice with cheese. They are cooked on a griddle, and made with sour milk, sour cream, butter and golden syrup. You can also make a wholemeal version that makes for great hiking food.

I use buttermilk to make this soft sweet lefse as I don’t have access to sour milk in Australia. The buttermilk works well. I always have a hard time keeping them in a round shape when rolling them out.

I’ve seen soft lefse recipes using skimmed milk and that’s not unlike butter milk. On the other hand you could let full fat milk get sour. If milk got sour when I was a kid mom would alway use it for making waffles and those waffles were great 🙂

So let it naturally go sour? Would that happen with homogenised pasteurised milk?

As long as it isn’t super pasteurised, it will go sour sometimes after the expiry date, but you need to use it shortly after that, if not it will separate and then it’s harder to use.

You can also take the milk out of the fridge and place it on your kitchen counter. Then it will get sour a lot quicker 😉

I always cheat when making soft lefse and similar griddle baking with a firm dough. I use a small plate and cut around it giving me a perfectly round lefse. Then I just work the cut offs back into the dough. Cheating I know, but it works 😉
