A Man’s Dinner For His Love

Shellfish cocktail

( 4 servings)
1 package frozen shrimp or 1 can crab meat
1 head of lettuce
1 chicory
2 tablespoons finely pepper fruit
For the sauce :
1 hg mayonnaise
3 tablespoons tomato ketchup
1-2 tablespoons grated horseradish
salt

Let the shrimp thaw or part crab into smaller pieces. Peel off lettuce leaves and rinse them well and let them drain well. Wipe off chicory, remove the outermost  leaves and cut an approx. 3/4-inch slab off the stalk. Stir together all the pieces to the sauce and add seasoning to taste. Cut salad and chicory into strips and distribute lettuce, chicory and pepper fruit in 4 wide desert glasses/bowls. Pour over the sauce and add the shellfish on top. Serve well chilled .

Beef in “dressing gown”

( 4 servings)
4 thick slices of beef fillet
1 hg mushrooms [3,5 oz.]
2 tomatoes
Half pepper fruit
1 tablespoon finely chopped yellow onion
2 tablespoons finely chopped parsley
2 tablespoons butter or margarine
2 slices bacon into strips
salt
pepper
1 cup red wine or good broth

Clean and rinse the mushrooms, tomatoes and pepper fruit and cut it all into pieces. Cleaning and scrape meat fillets and fry them quickly on both sides in dry, hot frying pan. Remove meat slices and let mushrooms, tomatoes , pepper fruits and onion simmer in lightly browned butter in the frying pan. Place each steak on a well greased greaseproof paper and spread the vegetable mixture on the steaks. Pour a little wine or broth on each and fold the paper around the steaks into tight packages . Place packages in a baking dish and bake in very hot oven , 300-375° C. [570 – 700° F.] for 5-6 minutes, if you want the steaks to be red inside, about 10 minutes if they are to be well done. Server steaks with rice in their “dressing gowns” directly from the baking dish.

Burning peaches
 ( 4 servings)
1 can peaches
Two glasses of brandy

Remove the peaches from the juice, heat the juice to the boing point and leave the peaches in it for a few minutes. Take the peaches out of the juice and put them in baking dish with a little of the juice. Pour in the brandy and light it at the table. Serve the peaches immediately in the fiery sauce.
