Almond Squares

A cake square recipe found in “Den Store Bakeboken”
(The Big Baking Book) published by Schibstedt in 1978

Almond Squares

Tasty neat little goodies for afternoon tea or the after dinner coffee.

Will make about 45 squares
Oven temperature: 200 C / 390 F.
Cooking time: about 15 minutes.

100 g [3,5 oz] margarine or butter
200 g [7 oz] Cottage Cheese
1 dl [0,2 pt] sugar
1 teaspoon vanilla
5 dl [1 pt]  (300 g / 10,5 oz) flour
4 teaspoons baking soda
50 g [1,75 oz] butter or margarine
25 g [0,9 oz] chopped almonds
1/2 dl [0,1 pt] sugar


[1] Melt the margarine and let it cool. Add the next three ingredients.

[2] Mix the flour with the baking powder and stir it into the butter mixture. Work the dough smooth and sroll it out. Put it in the buttered mould – 30 x 40 cm / 12 x 16 inch. Top with blobs of butter and sprinkle with chopped almonds and sugar.

[3] Bake at 200 C / 390 F for about 15 minutes. Let the cake cool then cut it into squares.
