Apple Soup From Western Norway

Warm soups were a regular dessert in Norway in the old days and were not particularly unusual even when I was a kid. We had both home-made rosehip soup, fruit soup and soups made on different types of berries for dessert back then.

Ingredients
1.5 liters [3 pt] water
500 g [1,1 lb] apples
sugar
65 g [2,3 oz] potato starch
Ice cream or whipped cream
Ripsgele

Approach

[1] Peel and core the apples  before cutting them in two and slicing the halves.

[2] Cook the apples in water till they are tender.

[3] Add sugar to taste.

[4] Make a thickening of potato starch and a little water and stir it into the soup.

[5] Serve the soup warm with ice cream or whipped cream and a dollop of jelly on top.

Tip: Other delicious dessert soups can be made by using 500 g/1,1 lb of other fruits like pears or plums, or berries like blueberries, raspberries or redcurrants.
