A traditional Norwegian dessert soup recipe found on
Warm soups were a regular dessert in Norway in the old days and were not particularly unusual even when I was a kid. We had both home-made rosehip soup, fruit soup and soups made on different types of berries for dessert back then.
1.5 liters [3 pt] water
500 g [1,1 lb] apples
65 g [2,3 oz] potato starch
Ice cream or whipped cream
 Peel and core the apples before cutting them in two and slicing the halves.
 Cook the apples in water till they are tender.
 Add sugar to taste.
 Make a thickening of potato starch and a little water and stir it into the soup.
 Serve the soup warm with ice cream or whipped cream and a dollop of jelly on top.
Tip: Other delicious dessert soups can be made by using 500 g/1,1 lb of other fruits like pears or plums, or berries like blueberries, raspberries or redcurrants.
