Ingredients:
1,1 pound / 500 g cloudberries
2 tablespoons sugar
about 2 tablespoons aquavit (may be omitted)
Raw cream:
4 egg yolk
3 tablespoons sugar
0,6 pint / 3 dl cream
Procedure:
Put cloudberries in a saucepan and heat them until they are lukewarm. Season with sugar and aquavit. The aquavit shall only round off the taste of cloudberries.
Raw cream; Whip eggnog of egg yolks and sugar. Whip the cream stiff and fold it into the egg mixture.
Server the cloudberries lukewarm with raw cream.
The 2 tablespoons of aquavit may NOT be omitted 🙂 Without having made the recipe (yet), I actually can feel the taste in my mouth, Yummy! Thor
