Baked Cod with Salad and Shrimp Sauce

Cod is perfect for everyday life when time is scarce, the family is hungry and you need a healthy, quick and tasty dinner.

But cod is also great as party food. Put cod on the table when family or friends get together for a nice meal and a good atmosphere is guaranteed. With its firm white meat and its delicate flavour, cod is perfect for both everyday and parties.

600 g / 1,3 lb of cod fillet without skin and bones
1 dl / 0,2 pt salt
1 l / 2 pt of water
4 tomatoes
1 cucumber
3 spring onions
3 tablespoons fresh parsley
2 tablespoon olive oil
½ lemon
salt and pepper
150 g / 5,3 oz cleaned shrimps
2 tablespoons butter
3 tablespoofish broth
2 dl / 0,4 pt light cream
2 sprigs of fresh dill


Set the oven to 180° C /  355° F. Cut the cod into serving pieces. Stir the salt into cold water until all is dissolved. Leave the fish in the salt water for about 8 minutes. Remove the fish pieces from the water, wipe them on kitchen paper and place them on a baking tray covered with baking paper. Bake in the oven until the fish is done, about 6 minutes.


Cut the tomatoes and cucumber into cubes of about  1 cm / 2/5 inch. Cut the onions in thin slices. put the vegetables in a bowl together with finely chopped parsley. Drizzle with olive oil and taste with the juice of lemon, salt and pepper.


Melt the butter and stir in the flour. Add the broth and cream, a little at a time. Season with salt. Add shrimp and dill right before serving.
