Baked Plums with Vanilla Ice Cream

Plums baked in the oven get a beautiful, concentrated taste and fine texture. A quick and easy dessert that is just as good for everydays as for the week ends.

butter for the mould
10 plums
1 tablespoon brown sugar (demerara)
8 walnut kernels
Vanilla ice cream
Lemon balm


[1] Set the oven to 180 C / 355 F.

[2] Rinse the plums and cut them in two lengthwise. Remove the stones, then cut the two halves into wedges.

[3] Place the plums in a greased oven proof mould. Sprinkle some brown sugar on the plums. If you want a little more “grown up” taste you drip a drop or two of brandy or rum on each plum wedge.

[4] Bake the plums in the oven for a maximum of 10 minutes. They should be soft but not liquid. they change fast, so beware.

[5] Serve hot plums with vanilla ice cream and chopped walnut kernels and garnish with lemon balm.
