Plums baked in the oven get a beautiful, concentrated taste and fine texture. A quick and easy dessert that is just as good for everydays as for the week ends.
butter for the mould
1 tablespoon brown sugar (demerara)
8 walnut kernels
Vanilla ice cream
 Set the oven to 180 C / 355 F.
 Rinse the plums and cut them in two lengthwise. Remove the stones, then cut the two halves into wedges.
 Place the plums in a greased oven proof mould. Sprinkle some brown sugar on the plums. If you want a little more “grown up” taste you drip a drop or two of brandy or rum on each plum wedge.
 Bake the plums in the oven for a maximum of 10 minutes. They should be soft but not liquid. they change fast, so beware.
 Serve hot plums with vanilla ice cream and chopped walnut kernels and garnish with lemon balm.
