Preparation: about 15 minutes
Oven temperature: 225° C. [435° F.]
Baking time: approx. 20 min
What you need for 12 muffins :
125 g [4,4 oz.] soft butter or margarine
125 g [4,4 oz.] sugar
250 g [8,8 oz.] flour
2 teaspoons baking powder
1 ½ dl [0,3 pint] milk
1 small banana
2 tablespoons chopped walnuts
Here’s how you do it:
 Cream butter and sugar until white.
 Whisk the eggs with a few tablespoons of flour. Stir the eggs into the butter/sugar mixture.
 Mix the remaining flour with the baking powder. Add this to the butter mixture alternately with milk.
 Peel the banana and cut it into small cubes. Stir them into the dough with the chopped walnuts.
 Divide the mixture into 12 fairly large muffin moulds.
 Bake in oven at 225° C. [435° F.] for about 20 minutes until baked through and have got nice colour. Test a with cake stick – if it is dry, the muffins are finished.
Serve as they are or with butter and marmalade.
