Banana muffins


Preparation: about 15 minutes
Oven temperature: 225° C. [435° F.]
Baking time: approx. 20 min

What you need for 12 muffins :
125 g [4,4 oz.] soft butter or margarine
125 g [4,4 oz.] sugar
2 eggs
250 g [8,8 oz.] flour
2 teaspoons baking powder
1 ½ dl [0,3 pint] milk
1 small banana
2 tablespoons chopped walnuts

Here’s how you do it:
[1] Cream butter and sugar until white.
[2] Whisk the eggs with a few tablespoons of flour. Stir the eggs into the butter/sugar mixture.
[3] Mix the remaining flour with the baking powder. Add this to the butter mixture alternately with milk.
[4] Peel the banana and cut it into small cubes. Stir them into the dough with the chopped walnuts.
[5] Divide the mixture into 12 fairly large muffin moulds.
[6] Bake in oven at 225° C. [435° F.] for about 20 minutes until baked through and have got nice colour. Test a with cake stick – if it is dry, the muffins are finished.

Serve as they are or with butter and marmalade.
