Blond Chocolate Mousse

200 g [7 oz] dark chocolate
4 eggs
3 dl [0,6 pt] whipping cream
1 teaspoon of vanilla sugar or vanilla


Melt the chocolate in a double boiler. Separate the eggs. Stir one egg yolk at a time into the melted chocolate. Whip the cream and vanilla sugar. Fold the whipped cream into the chocolate/egg yolk mixture. Whip the egg whites stiff and folk it in. Distribute the mousse in serving glasses and cool in the refrigerator for 1-2 hours. Garnish with roughly chopped dark chocolate just before serving
