Elvis loved a good BLT, probably because two of the ingredients were at the top of his roster of favorites: bacon and big old juicy beefsteak tomatoes. He loved tomatoes. While you’re assembling this sandwich, you may want to put “Just For You” on the record player. And remember: Elvis preferred well-done bacon, not actually burned to charcoal, but cooked very crispy.
Makes 1 sandwich
1 1/2 tablespoons mayonnaise
2 slices white bread, toasted dry
3 lettuce leaves
2 1/4 inch slices of tomato
1 slice Cheddar, American, or Swiss cheese
4 slices bacon, well-done and drained
To assemble the sandwich: spread the mayonnaise on both slices of toast. Top one slice with lettuce, tomato, cheese, and bacon. Top with remaining slice of toast. Cut in half and serve immediately.
To serve hot: In a lightly greased frying pan, grill the tomato slices. Remove from the frying pan. Butter the toast slices on one side and put one slice butter-side down in the frying pan. Top with cheese, grilled tomatoes, bacon, and the second piece of cheese, omitting the lettuce. Top with the other piece of buttered toast and grill to golden brown on both sides. Cut in half and serve immediately.
