Blueberry Corn Muffins

Makes 10 – 12 muffins

1 1/4 cups corn meal
1 cup unsifted flour
1/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup packed brown sugar
1 egg
1 cup buttermilk
3/4 cup corn oil
1 1/2 cups fresh or frozen blueberries


[1] Preheat the oven to 425° F. Grease 12-muffin tin with butter.

[2] Combine the dry ingredients in a large mixing bowl. ln another bowl, combine the egg, buttermilk, and oil and blend with a wire whisk. Pour the egg mixture into the dry ingredients, stirring until blended. Fold the blue-
berries into the batter. Be careful not to ovennix or the batter will turn blue.

[3] Spoon the batter into the greased muffin tin. Bake for 20 rriinutes. Serve the muffins warm with butter.
