Makes 10 – 12 muffins
1 1/4 cups corn meal
1 cup unsifted flour
1/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup packed brown sugar
1 cup buttermilk
3/4 cup corn oil
1 1/2 cups fresh or frozen blueberries
 Preheat the oven to 425° F. Grease 12-muffin tin with butter.
 Combine the dry ingredients in a large mixing bowl. ln another bowl, combine the egg, buttermilk, and oil and blend with a wire whisk. Pour the egg mixture into the dry ingredients, stirring until blended. Fold the blue-
berries into the batter. Be careful not to ovennix or the batter will turn blue.
 Spoon the batter into the greased muffin tin. Bake for 20 rriinutes. Serve the muffins warm with butter.
