Bran Honey Apple Muffins

1 cup bran
3/4 cup Milk
1 egg
1/4 cup liquid honey
1 cup sifted flour
1/4 teaspoon baking soda
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 cup melted shortening
1 2/3 cups peeled chopped tart apples

Combine bran and milk; let stand 5 minutes. Beat egg; add with honey to bran and milk. Sift together dry ingredients; add to bran mixture. Add melted shortening; quickly stir in. Add 1 cup apples. Fill greased muffin pans 2/3 full. Sprinkle with remaining apples. Bake in moderately hot oven 375o F., for 30 minutes.

Makes 12 luscious, different-tasting muffins
