Make dough as for Calumet Biscuit (see below), adding two tablespoons of sugar to the baking powder and flour if sweet shortcake is desired. Roll dough in two round pieces and spread with butter. Bake. in two round cake tins fifteen to twenty minutes in moderate oven, at.350o – 400o F. Brush with melted butter. Put the strawberries and juice between the layers, and on top of shortcake. Whipped cream sweetened and flavoured to taste can be added.

4 level’ tablespoons butter or lard
1 1/2 cups milk
1 level teaspoon salt
Sift flour once, then measure, add salt and baking powder and sift three times, rub shortening in with fork or spoon, add milk and mix lightly, turn out on a well-floured board and roll or pat one inch thick, cut and bake in quick oven (450o F.) fifteen to seventeen minutes.
