Casserole With Pork Ribs and Pineapple

Preparation: about 2 hours.

The combination of pork and pineapple are good. This casserole with its simple accessories are tasty, but still cheap party food. Cold beer goes down well with this course.

1-1 ¼ kg [2,2-2,75 pounds] meaty pork ribs, cut into large pieces
2 teaspoons salt
white pepper
1 tablespoon butter or margarine
1 onion , finely chopped
50 g [1,75 oz.] celery , finely chopped
1 green bell pepper , finely chopped
1 can pineapple chunks, about 200 g [7 oz.]
1 tablespoon soy sauce, Chinese or Japanese
2-3 tablespoons vinegar
1 tablespoon corn-starch

Brown the meat in a frying pan with a little fat, and season with salt and freshly ground white pepper. Place the pieces into a pot when they’ve got a nice brown colour. Sauté onions, celery and peppers for a few minutes in the frying pan. Pour it all over the meat and add the pineapple, pineapple juice, soy and vinegar. Stir corn-starch with 2 tablespoons of cold water and pour it into the pot, stirring constantly. Let the dish boil and then simmer under a lid for 45 min. Remove the li , let the dish cook another 30 min. until meat is tender and the sauce suitable thick.

Serve with boiled rice and/or baguettes and mixed salad with cucumber, tomatoes and onions.
