A delicious cake baked in a roasting pan. Around 1900, several changes occurred which made cakes and different desserts more common on the menu of most Norwegian people because the cast iron stove now made it possible to bake things in the oven. In addition, access to sugar had become better in the  early1900s.

This recipe was submitted by Randi Fossland to Norway’s Associated Country Women’s recipe relay in 2012.

An old recipe from Toten. This recipe is taken from the book “Amtmanninen og hennes døtre” (The country governor’s wife and her daughters), written by Torveig Dahl, Kirsten Gustad, Anne Mari Amlien, Vigdis Bjørhovde, Rita Wentzel-Larsen and Karin E. Jansen.

The book is based on the handwritten recipe from Ditlevine Weidemann and her daughters Ingeborg Marie, Nahyda and Amalie from Stenberg at Toten, where they lived from 1802 to 1901.

The country governor’s wife kept track of large and comprehensive households, and was responsible for ensuring that what was served for both everyday and parties was state-of-the-art and contentive for the family, for the staff – and for all the guests throughout the year.

Internet and colour printers became the death of the recipe card collections and to be honest they are not greatly missed. I have quite a few of these card boxes and ring folders in my collection of old recipes and cookbooks and really, they are far from pracical in use. In no time the ring folders get hard to leaf through and you need to be a lot tidier than me to put the cards back in their right place in the boxes.

But as you can see, I found a solution to that problem. I scanned the lot of them and ran the texts through ocr scanning. A lot more practical solution if you ask me – Ted 😉
