Soft Gingerbread / Myk Pepperkake

This is a basic recipe for Norwegian soft gingerbread with cultured milk our sour cream for juicy consistency. Vary with different flavors like cranberries, nuts or icing on top. If you want to make gingerbread muffins, pour the batter into muffin moulds, then bake for 15-20 minutes. Glace with icing sugar.

Traditionary lefse spread from West Agder in southern Norway. Sweet cheese has traditionally been eaten in several parts of the country and is sometimes known as egg cheese. This was often a regular feature on the menu at Christmas and at other festivities.

It takes 17 minutes from start to the cake is in the oven and the dishes washed. The cake is delicious and very juicy. It is also useful as basic recipe, since the spice can be replaced with cocoa.”
