Traditionary lefse spread from West Agder in southern Norway. Sweet cheese has traditionally been eaten in several parts of the country and is sometimes known as egg cheese. This was often a regular feature on the menu at Christmas and at other festivities.

Elisabeth Helle who’s behind the recipe says: “I was given this recipe by my Danish mother-in-law and it is incredibly easy to bake. It takes 17 minutes from start to the cake is in the oven and the dishes washed. The cake is delicious and very juicy. It is also useful as basic recipe, since the spice can be replaced with cocoa.”
