Cauliflower Gratin with Cured Ham

Cauliflower Gratin with Cured Ham

Simple and easily! A good option if you want to try something new.

1 cauliflower
3 tablespoons flour
2 tablespoons butter
5 dl [1 pt] milk
100 g [3,5 oz] cheddar, torn
50 g [1,75 0z] parmesan
150 g [5.3 oz] cured ham or bacon
1 bunch of chives, chopped
salt to taste
pepper to taste

[1] Set the oven to 220 C / 430 F.

[2] Melt the butter in a saucepan, stir in the flour. Add milk while stirring. Bring to a boil and let the sauce boil for a few minutes stiring all the time.

[3] Remove the saucepan from the heat, add the cheddar (save the parmesan) and let it melt.

[4] Cook the cauliflower till tender. Let it drain. Put it in a greased, heatproof mould. Pour the cheese sauce over it, top with grated parmesan, and bake in the oven for about 20 minutes.

[5] Fry the cured ham or bacon  in some butter or margarine until crispy.

[6] Sprinkle the chives on the cauliflower and serve it with the fried ham or bacon.

[7] Served with bread and good butter.
