A tasty side dish found on gilde.no
Purée is a good dinner accessory, where bacon does a good job as flavoring and topping. Test out different varieties such as Jerusalem artichoke purée, pea purée or as in the recipe below – cauliflower purée.
2 dl [0,4 pt] milk
2 tablespoons butter
1 tablespoon sugar
1 teaspoon salt
1/2 tsp pepper
150 g [5,3 oz] bacon, sliced
 Remove the leaves and cut the cauliflower into small bouquets. Put the bouquets in a saucepan with water and cook until the cauliflower is soft. Pour off the boiling water and leave the cauliflower for a few minutes.
 Use the handmixer and run the cauliflower to a smooth purée and pour it into a serving bowl.
 Fry the sliced bacon and chop it into small pieces. Sprinkle the bacon over the puree as topping. Decorate with fresh thyme or coriander.
