Cheese Pie With Bacon

Pastry for 1-crust 9-inch pie, unbaked
1 1/2 cups (6 ounces) grated Swiss cheese
8 slices crisp bacon. crumbled
3 eggs
1 cup heavy cream
1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon pepper
Dash of cayenne
1/2 teaspoon powdered mustard


Roll pastry to 1/8-inch thickness and line a 9-inch pie mould; flute edges. Sprinkle cheese and bacon into pan. Beat remaining ingredients together and pour into lined pan. Bake in preheated moderate oven (375° F.) for 45 minutes. Cut into wedges.

Makes 6 servings.
