Ingredients
4 x 200 g [4 x 7 oz] fresh champignons
or mixed mushrooms
1 tablespoon butter or margarine
1 coarsely shredded leek
4-8 tomatoes
salt, pepper
4 slices white bread or wholemeal bread
parsley
Do like this
[1] Clean and cut the mushrooms into thick slices. Fry them lightly in a little butter or oil. Add the leeks and tomatoes cut into thick cubes. Season with salt and pepper. Pour the hot mix on freshly roasted slices of bread.
[2] Garnish with parsley.
[3] Serve with Chinese soy sauce for those who wants to inhance the chinese effect.
Variation: Add some smoked ham cut in fine strips as you fry the mushrooms .
