4 x 200 g [4 x 7 oz] fresh champignons
or mixed mushrooms
1 tablespoon butter or margarine
1 coarsely shredded leek
4 slices white bread or wholemeal bread
Do like this
 Clean and cut the mushrooms into thick slices. Fry them lightly in a little butter or oil. Add the leeks and tomatoes cut into thick cubes. Season with salt and pepper. Pour the hot mix on freshly roasted slices of bread.
 Garnish with parsley.
 Serve with Chinese soy sauce for those who wants to inhance the chinese effect.
Variation: Add some smoked ham cut in fine strips as you fry the mushrooms .
