Chocolate and Coffee Cream

200 g [7 oz] dark chocolate
6 dl [1,2 pt] Cream
2 tablespoons sugar
4 tablespoons strong cold coffee (liquid)
100 g [3,5 oz] walnuts
1 tablespoon sugar
2 tablespoons of honey
0.5 tsp salt


Cream: Finely chop the chocolate and put it in a bowl. Boil half of the cream with the sugar. Pour the hot cream over the chocolate and stir well until the chocolate has melted. Add the rest of the cream and coffee and mix well.

Pour the mixture into serving ramkins or bowls. Let the ramkins/bowls stand cold for at least 4 hours, preferably overnight.

Nuts: Heat up honey, sugar and salt in a saucepan over medium heat until it melts. Add nuts and stir around until the nuts are well covered with the honey/sugar mix. Place the nuts on a baking sheet with baking paper. Separate the nuts a little so that they are caramelized separately. Bake at 200° C / 390° F for 5 minutes. Cool.

Chop the caramelized nuts and sprinkle on top of the chocolate cream just before serving.
