Chocolate Sponge anno 1927

Ingredients
1 level tablespoonful gelatine powder
1/4 cup cold water
1/4 cup boiling water
1 teaspoonful vanilla
1/3 cup sugar
3 eggs
A few grains of salt
2 square. of chocolate or 6 tablespoonfulu cocoa

Method

[1] Soak gelatine in cold water five minutes. then dissolve in boiling water. Add cocoa or melted chocolate.

[2] Beat egg whites until stiff and add well beaten egg yolks to the whites. Add sugar. then the dissolved gelatine. which has been beaten well. Beat and add flavoring.

[3] Pour into wet mold. chill and serve with whipped cream or whipped evaporated milk.

Note: Chopped nuts or macaroons may be added and, for a more elaborate dessert. line mold with lady fingers or sponge cake.
