A classic Norwegian griddle cake recipe found on godt.no
These griddle cakes are always popular and very quick to make. This recipe also contains little fat, which makes the the cakes suitable as everyday food.
Serve the cakes with homemade jams. And if you want to make the kids extra eager, you can sprinkle chopped chocolate on the cakes while they cook, nothing beats chocolate griddle cakes!
4 dl [0,8 pt] kephir
5 tablespoons sugar
1 teaspoon of baking soda
1 teaspoon of Hartshorn salt (Baker´s ammonia)
4 dl [0,8 pt] flour
 Whisk together kephir, sugar and eggs.
 Sift the soda and hartshorn salt with the flour and add to the bowl. Mix everything quickly together into a lump-free batter.
 Heat a teflon-coated frying pan or griddle and fry the cakes at medium-heat (about 3-4 at a time on a large griddle, one at the time in a frying pan). Fry the cakes a couple of minutes till they are light golden on the underside before turning them and frying them a couple of minutes on the other side. There is no need to grease the frying pan or griddle. The caks swell slightly during the frying.
 Serve the freshly baked griddle cakes with homemade jams. Strawberry jam taste particularly good with these cakes.
