Club Sandwich with Cod

Cod is perfect for everyday life when time is scarce, the family is hungry and you need a healthy, quick and tasty dinner.

But cod is also great as party food. Put cod on the table when family or friends get together for a nice meal and a good mood is guaranteed. With its firm white fish meat and its delicate flavor, the cod fits just perfectly both for everydays and parties.

600 g [1,3lb] of cod fillet cleaned of skin and bones
1 tablespoon coarslty ground pepper
1 teaspoon dried thyme
2 tablespoons butter
1 tablespoon olive oil
100 g [3,5 oz] bacon
2 dl [0,4 pt] light sour cream
1 tablespoon mustard
1 teaspoon of sugar
2 tomatoes
8 romano salad leaves
8 slices of farmhouse bread


Cut the cod into serving pieces. Mix the pepper and thyme and turn the cod in the spice mixture. Sprinkle the cod with salt and fry it in a mixture of butter and olive oil, for about. 3 minutes on each side. Fry the bacon crisp and let it drain on a kitchen paper.

Dressing: Mix the sour cream, mustard and sugar.

Accessories: Cut the tomatoes into slices, wash the salad and toast the bread slices. Place cod, bacon, dressing, tomato and salad on half of the bread slices.

Place the rest of the bread slices on top and serve.
