As I mentioned the first time I posted from this book, food flavoured with coffee tends to be most popular among grown-ups. But who cares, as I concluded then, we are grown-ups aren’t we – Ted

Ingredents
1/2 cupful butter or substitute
1 cupful sugar
2 eggs
1/2 cupful strong coffee
1 1/2 cupful flour
2 teaspoons baking powder
1/3 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves

Method

Cream the butter and sugar together until light and fluffy, separate the eggs and beat and add the yolks, then the coffee alternately with the flour, baking powder, salt and spice sifted together. Last of all fold in the whites which has been beaten stiff. Bake in well oiled shallow pan in a moderate oven – 350 – 375 F – thirty to forty minutes. Serve plain or frosted.
