Cornwall Toast

1 orange
3 sugar cubes
3 tablespoons mayonnaise
6 tablespoons heavy cream
1 tablespoon grated horseradish
2 medium sized sour apples
1 onion
4 tablespoons goose fat
300 g [10,5 oz] roast beef (4 slices)
1/2 teaspoon pepper
4 large slices of white bread (toasted)


[1] Wash and scrub the orange. Rub the peel with the sugar cubes and then squeeze out the juice. Mix sugar, orange juice, mayonnaise, cream and horseradish with a hand mixer till you got a thick sauce.

[2] Peel the apples, cut them into quarters, remove core, and cut them into thin slices. Clean the onion and cut it into thin slices. Melt goose fat in a pan. Add the apple and onion slices, leave it over medium heat about 15 minutes, do not brown.

[3] Cut the roast beef into strips and put them in the pan the last 5 minutes, season with pepper and add a little salt if necessary. Spread the mixture on the toasted bread slices and pour the orange sauce on top.
