3 sugar cubes
3 tablespoons mayonnaise
6 tablespoons heavy cream
1 tablespoon grated horseradish
2 medium sized sour apples
4 tablespoons goose fat
300 g [10,5 oz] roast beef (4 slices)
1/2 teaspoon pepper
4 large slices of white bread (toasted)
 Wash and scrub the orange. Rub the peel with the sugar cubes and then squeeze out the juice. Mix sugar, orange juice, mayonnaise, cream and horseradish with a hand mixer till you got a thick sauce.
 Peel the apples, cut them into quarters, remove core, and cut them into thin slices. Clean the onion and cut it into thin slices. Melt goose fat in a pan. Add the apple and onion slices, leave it over medium heat about 15 minutes, do not brown.
 Cut the roast beef into strips and put them in the pan the last 5 minutes, season with pepper and add a little salt if necessary. Spread the mixture on the toasted bread slices and pour the orange sauce on top.
