Cottage Cheese and Corn Patties

Cottage Cheese and Corn Patties

4 servings

1 can [340 g/12 oz] of corn
6 eggs
2 dl [0,4 pt] flour
1 box (250 g/8,8 oz) cottage cheese original or light
½ teaspoon of salt
1/8 tsp pepper
150 g [5,3 oz] bacon


[1] Drain the corn and mash them to a smooth puree, with a fork or handmixer.

[2] Whisk the eggs together and stir in the flour. Mix with corn purée, cottage cheese, salt and pepper.

[3] Fry small patties at medium heat in butter in a frying pan, 2 – 3 minutes on each or until they are done.

Serve freshly baked patties with bacon and a salad.
