Crab Burger with Røsti and Pesto

In most major food stores in Norway, you cet get crab shells filled with crab meat. If you can’t get hold of this, buy two pre-cooked crabs and clean them yourself.

2 filled crab shells
2 shallots
1 tablespoon fresh chive
½ red pepper
1 teaspoon of mustard
1 tablespoon of potato starch
1 egg
2 tablespoons butter
2 tablespoon oil
4 potatoes
1 teaspoon salt
½ teaspoon of pepper
4 dl [0,8 pt] small leaf salad


Take the crab meat out of the shell and mash it with a fork. Finely chop the shallots and chives and cut the pepper into  very small cubes. Stir together crab meat, shallots, chives, peppers, mustard, potato flour and eggs till everything is well mixed. Form flat burgers and fry them golden in a mixture of butter and oil.

Røsti: Peel and grind the potatoes and squeeze as much water as possible. Stir in salt and pepper and make two flat rösti per burger. Heat plenty of oil in a large frying pan and fry the rösti for about 2 minutes on each side. Place a crab burger between two rösti, and serve with salad and pesto.
