A delicious cordial that is loved by both grownups and kids. This cordial is often made for Christmas here in Scandinavia and every IKEA in Scandinavia has their version in their shops the year round.

Makes: about 3 pints
2 pt water
2,2 lb cranberries (fresh or frozen)
1 pt sugar
This is what you do
 Boil water, cranberries and suga in a saucepan with a thick bottom. Let it all simmer for about 15 min.
 Mash the cranberry against the edge of the saucepan to release the juice and to give the cordial a lots of flavor and color.
 Strain the juice through a kitchen towel or a fine mesh colander.
 Fill the cordial on clean glass bottles. Keep cold.
Tip! If you use well cleaned glasses and bottles it extend the shelf life of your cordials, jellies and jams. The very best is to first to wash them in the dishwasher or by hand, and then place the jars and bottles in a hot oven (210 F) for about 15 min. Juice, which has the shorter shelf life than jellis and jams, can also be frozen in plastic containers.
