Creamy Strawberry Dessert


3 egg yolk
2 tablespoons sugar
200 g [7 oz] neutral cream cheese
60 g [2 oz] icing sugar
1 vanilla bean
2 teaspoons lemon juice
10 oatmeal crackers
Strawberry Sauce:
1 basket of strawberries
2 tablespoons sugar

4 servings


[1] Whip eggnog of the egg yolks and sugar. It should have a light yellow and fluffy consistency.

[2] Stir together cream cheese, powdered sugar, lemon juice and the seeds from the vanilla pod.

[3] Add some of the egg mixture to the cream cheese mixture and stir until smooth, them add the rest of the egg mixture and and wisk it all until you have a smooth slightly fluffy cream.

4] Clean the strawberries and mix them with the sugar and use a handmixer or a fork to make a smouth sauce.

[5] Put the crackers in a bag and crush until you have coarse crumbs.

[6] Place crumbs in the bottom of a dessert glass, add eggnog/cheese mixture and top with the strawberry sauce.
