These biscuits are a natural part of any cheese party and they tastes delicious with salads and soup. With both matured edam and cayenne they have a sharp and delicious taste.
Tip: The iscuits keeps the best in a closed tin or a glass with a tight lid.
You will need:
75 g [2,6 oz] butter
2 dl [0,4 pt] flour
125 g [4,4 oz] coarsely grated matured edam
¼ teaspoon cayenne pepper
2 teaspoons mustard powder
50 g [1,74 0z] finely grated matured edam
 Set the oven at 180° C / 355° F.
 Mix all ingredients except the finely grated edam in a food processor and blend until you have a smooth but a little coarse dough.
 Place the dough in the refrigiator for at least 30 minutes.
 Roll the dough to 1 inch thickness and punch out round biscuits with a glass or cut into squares. Place the biscuits on a greased baking sheet and sprinkle with the finely grated edam.
 Bake the biscuits for 10 to 12 minutes until golden and crispy. Cool on a rack.
