Danish Apple Pork

A good old-fashioned Danish dish. Usually served on the breakfast table at Christmas. Classic apple pork is a dish with three great ingredients – apples, pork and onions.

The recipe is for 4 servings
Time: 30 min. + soaking: 2 hours

1 kg [2 lb] pork in slices
Salt, pepper
2 apples
1 large onion
Fresh thyme
1 teaspoon of cane sugar (demerara)


[1] Place the slices of pork in a bowl and turn them in 2 tablespoons of salt. Leave them, if possible, to soak up the salt for a couple of hours.

[2] Fry the pork on a dry frying pan for approx. 20 min. until it has turned crisp. Pour the drippings out of the pan and into a small bowl from time to time during the frying.

[3] Let the pork drain off on kitchen paper and keep it warm.

[4] Cut apples and onions into slices and fry them with chopped thyme in the frying pan in a little of the drippings.

[5] Sprinkle the slices with cane sugar and let them caramelize.

[6] Served the apple pork like the Danish do, on roasted rye bread with mustard.
