Danish Spicy Teddy Cakes

You will not only get sweet on these cakes.
They will also make you fond of teddy bears.

The dough gives about 30 cakes

1 ½ dl [0,3 pt] light cream, 20 %
4 dl [0,8 pt] brown sugar
1 ½ dl [0,3 pt] Golden Syrup (Lyle’s or similar)
1 tsp. ground ginger
1 tsp. ground cinnamon
2 ½ teaspoon. baking soda
1 tbsp. water
11 dl [2,2 pt] flour

Course of action

[1] Stir cream, sugar, syrup and spices together. Dissolve the soda in the water and stir it into the mix. Stir the flour into the mix and knead until you got a smooth dough. Let the dough rest overnight.

[2] Divide the dough into four pieces. Of each piece of dough you shall make 10 larger pieces for the bodies, 10 slightly smaller pieces for the heads, 40 pieces for arms and legs and 20 small pieces for the ears. Shape bars of the pieces for the arms and legs and form the others into balls. Put the pieces together making teddy bears as seen on the picture above and place them on a baking paper covered baking sheet.

[3] Bake the teddies in the oven at 200° C / 390° F for about 15 minutes. Put a stick in each teddy bear as soon as they are out of the oven. Let the tedders cool off on a grid. Decorate to taste. You can also bake round gingerbread of the dough.
