Duchess Potatoes


Duchess Potatoes are mashed potatoes with added egg yolk, shaped with piping bag or knife and then roasted in the oven. Decorative new twist to your dinner.

800 g [1,75 lb] potato
2 dl [0,4 pt] low-fat milk
2 egg yolks
1 tablespoon butter
½ teaspoon grated nutmeg
salt and pepper to taste
rapeseed oil for brushing


[1] Peel and cut potatoes into smaller pieces and boil them until tender in the milk.

[2] Strain off the milk. This makes it easier to mash the potatoes. Mash the potatoes, preferably through a potato press.

[3] Blend in the milk, butter and egg yolks.

[4] Season with nutmeg, pepper and a little salt.

[5] put the mixture in a piping bag and spray small shapes on an oven sheet covered with baking paper.

[6] Brush the shapes with a little oil and bake in the oven at 200° C / 390° F, or till the duchess potatoes have got nice color – 15 to 20 minutes.

[7] You can also spray a border along the edge of an ovenproof dish. Decorative and fun. Bake for 30-35 mins until browned and crisp.
