Duchess Potatoes are mashed potatoes with added egg yolk, shaped with piping bag or knife and then roasted in the oven. Decorative new twist to your dinner.
800 g [1,75 lb] potato
2 dl [0,4 pt] low-fat milk
2 egg yolks
1 tablespoon butter
½ teaspoon grated nutmeg
salt and pepper to taste
rapeseed oil for brushing
 Peel and cut potatoes into smaller pieces and boil them until tender in the milk.
 Strain off the milk. This makes it easier to mash the potatoes. Mash the potatoes, preferably through a potato press.
 Blend in the milk, butter and egg yolks.
 Season with nutmeg, pepper and a little salt.
 put the mixture in a piping bag and spray small shapes on an oven sheet covered with baking paper.
 Brush the shapes with a little oil and bake in the oven at 200° C / 390° F, or till the duchess potatoes have got nice color – 15 to 20 minutes.
 You can also spray a border along the edge of an ovenproof dish. Decorative and fun. Bake for 30-35 mins until browned and crisp.
