Egg and Ham Sandwich with Green Sauce

This dish can be served as light lunch or a small evening meal. You may want to toast the white bread slices in your  toaster instead of frying them in butter in the frying pan.

Sandwich: Fry a white bread slice per. person lightly in butter in the frying pan. Place the slices on plates and cover with a slice of ham or other nice cold cuts. Put a poached egg on top and pour a few spoons of green sauce over the sandwiches.

Green sauce: Mix 1 pack of mayonnaise with 1 dl / 0,2 pt whipped cream. Add plenty of finely chopped dill or parsley, or both. The dish can also be served with hot bearnaise or hollandais sauce, as a small hot dish. The green sauce can be made leaner by mixing light mayonnaise and light sour cream with finely chopped greens.

Tip: Both bearnaise sauce and hollandais sauce can be bought in cans, but can also be made of a dry ingredints in bags.
