The big, heavy clusters of glossy black elderberries give a dark and aromatic cordial that tastes delicious both cold and hot. Elderberry cordial is just the thing to drink when having a cold – it is alleged to have an antitussive effect.
1 kg [2,2 lb] elderberries, rinsed and without stems
500 g [1,1 lb] apples, in cubes
The juice of 1 lemon
6 dl [1,2 pt] sugar per liter of juice
Here’s how to make it
 Put elderberries and apples in a saucepan and fill with water halfway up on the berries. Boil for 15-20 minutes. Sieve the berries through a linnen bag. Let the bag hang over a large bowl for several hours. Do not squeeze the bag, then you cordial will get cloudy.
 Bring the Juice to a boil and add lemon juice and sugar. Cook till the sugar is completely dissolved.
 Pour the finished cordial onto clean, warm dry bottles and screw the tops on immediately. Store the cordial dark and cold.
