White bread filled with shrimp salad

(Serves 6-8 )

1 white bread
butter or margarine
1 package frozen shrimp
2 apples
approx. 2 hg cucumber
10 finely chopped walnuts

For the sauce :
2 cups thick sweet or sour cream
2 hg mayonnaise

For garnish :
Tomato wedges

Cut away the top crust of the white bread and  cut away the inside careful to keep it in one piece. Cut the insides into squares , but leave them connected at the bottom. Brush with melted butter and place both the cutaway and white bread form on baking sheet in hot oven (250-275 ° C.) Toast for a few minutes until it all get a nice colour . Rinse and cut apples and cucumber into small cubes and mix with the defrosted shrimp . Mix mayonnaise and cream and add apples, cucumber and shrimps to the mix. Fill the white bread form with the salad, garnish with tomato wedges and serve with the freshly roasted cutaway.

Open-faced cheese sandwiches

Garnished with radishes and green pepper

Hollywood patties

( Serves 4 )

1/2 kg ground beef
1/2 green pepper fruit
1/2 tablespoon grated onions
Salt and pepper

For roasting:
2-3 tablespoons butter or margarine

For garnish:
2 tomatoes
1 pepper fruit or 1 pickled cucumber

Rinse the tomatoes and peppers and remove stems and cores. Roughly chop the tomatoes and pepper fruit and mix with chopped ground beef . Add the grated onions, season with salt and pepper and shape 4 round approx. . 2 cm thick steaks , grill or fry patties in well heated butter in hot skillet about  4-5 minutes on each side if they are to be cooked through, 2-3 minutes , if they should be red inside . Sprinkle salt and pepper on both sides of the steaks and place on warm serving dish. Spread mustard on the steaks and sprinkle with chopped tomatoes and chopped pepper fruit or sour cucumber. Serve these patties for dinner with chips , or server them in small French breads cut in  half as evening snacks.

Rice pudding with fruit salad

(serves 4)

4 cup rice flakes or rice
8 dl milk
2 cups whipped cream
1 can of fruit salad

Cook the rice flakes in milk approx. 3 min (if you use rice, follow the boiling instruction on the pack.) add sugar to taste and refrigerate. When chilled stir in the cream and pour the rice pudding in dessert dishes. Server with fruit salad .
