Fish on Bed of Spinach

A classic Scandinavian fish recipe found in “Mat For Alle” (Food
for Everyone) published by Tiden Norke Forlag in 1985

Fish on Bed of Spinach

The bottom shelf of the oven
Oven temperature: 200° C [390° F]
Cooking: 40- 45 min.

1 package frozen spinach
400 g [0,9 lb] cod / saithe
The cheese sauce:
4 dl [0,8 pt] milk
2 tablespoons flour
1/4 tsp salt
100 g [3,5 oz] grated cheese
Bread crumb topping


Place the thawed spinach in the bottom of a casserole dish. Cut the fish fillets into slices and spread them on top of the spinach. Make the  sauce and pour it over the fish and spinach. Sprinkle with bread crumbs. Bake at 200° C / 390° F on the bottom shelf for 40-45 minutes. Server with boiled potatoes and grated raw carrots.
