Spicy and golden apple slices sprinkled with fennel sugar and dipped in apple caramel sauce can be summed up with one word: delicious!
4 apples, large
100 g [3,5 oz] flour
1 tablespoon sugar
5 tablespoon butter, melted
1.5 dl [0,3 pt] milk
2 egg whites
6 dl [1,2 pt] oil, neutral, for frying
Custard, for the serving (optional)
2 teaspoons fennel seeds
1 dl [0,2 pt] sugar
Apple Caramel Sauce:
2 dl [0,4 pt] sugar
2 dl [0,4 pt] apple juice or apple cider
2 tablespoons dairy butter
Mix flour and 1 tablespoon sugar in a bowl. Stir in milk and melted butter till you got a smooth batter. Leave the batter to rest on the kitchen counter for about 30 minutes.
Make the caramel sauce while you wait. Melt sugar to golden caramel in a small saucepan. Take care that it does not get too dark. Add apple juice/apple cider (the caramel will bubble and sputter so be careful) and let the sauce boil quietly until all the caramel has dissolved and the sauce has got a syrupy consistency. Turn off the heat and whip in the butter.
Crush the fennel seeds in a mortar, add the sugar and mix well. Sprinkle the fennel sugar over a large bakin sheet of baking paper.
Peel the apples, remove the kernels and cut the apples into 1 centimeter / 3/5 inch thick slices. Whip the egg whites stiff and fold them into the batter.
Heat the oil in a medium sized thick-bottomed saucepan, be careful not to overheat the oil.
Dip the apple slices into the batter and fry them golden and crispy, it takes about 2 minutes. Turn the apple slices a few times and fry just a few at the time, making sure the oil doesn’t cool. Lift the golden apple slices out of the oil, let them drain quickly on kitchen paper and turn the slices in the fennel sugar immediately.
Serve freshly made with apple caramel sauce.
Tip: Vanilla sauce is also nice with these apple slices. Vanilla ice cream or cinnamon ice cream is so too.
