Fried Cod and Shrimp Panettas with Spicy Noodle Salad


400 g [0,9 lb] cod fillets
375 g [0,8 lb] shrimp, cleaned
2 egg whites
Zest of 1 lemon
0.5 tsp salt
1 dl [0,2 pt] shredded coconut
4 dl [0,8 pt] bread crumbs
Flour for breading
2 eggs for breading
Black pepper
Butter for frying
Sunflower oil for frying
Nudle salad:
250 g [0,55 lb] noodles
1 squash
1 red chili
1 red onion
3 tablespoons oyster sauce
2 tablespoons fish sauce
1 bunch coriander
Olive oil

This is what you do

[1] Put fish fillets, shrimp, egg white and ½ teaspoon salt in a food processor. Mix together to form a coarse farce. Add the grated lemon rind and black pepper. Form the farce into oblong, thick patties. Bread the patties twice in flour and lightly beaten eggs and roll them in shredded coconut.

[2] Boil salted water for the noodles and cut squash into thin slices lengthwise. Cut the onions into thin slices and finely chop the chilli. Put the noodles in the boiling water and set it aside for 3-4 minutes. Pour the noodles into colander / strainer and let cool.

[3] Fry the cod and shrimp panettas in butter and olive oil in a hot frying pan for a few minutes on each side.

[4] Fry the onion, chili and squash in olive oil in a hot frying pan, add the noodles and cook the mixture quickly over high heat. Flavour the noodle salad with oyster sauce, chopped coriander and fish sauce.
