Fruit Cake

1 cup shortening
2 cups sugar
4 cups flour
1 cup sweet milk
1 tablespoon baking powder
1 teaspoon cloves
1 teaspoon cinnamon
8 egg whites
1 tablespoon of allspice
1 teaspoon nutmeg
1 lb. raisins
1/2 currants
1/2 lb. citron
1/4 candied cherries
1 cup nuts

Cream sugar and shortening, add spices, milk, egg whites, then the flour with baking powder, sifted with it. The add fruit to this and bake in five layers

FILLING (if desired)
Juice of 2oranges
Rind of 2 oranges (grated)
Juice of 2 lemons
Rind of 2 lemons (grated)I large cocoanut (grated)
2 cups sugar
1 cup boiling water
4 tablespoon corn-starch

Put all except the corn-starch in a pan, and when this begins to boil, add the corn-starch mixed with a little water. Boil until thick enough to spread. Let cool a little and then put between layers and on top.
