Galia Melon has a distinctive grid pattern on the shell. The shell has a base color that is bright yellow, and the web pattern is gray-white to almost golden brown. Galia Melon is a big and round melon with a yellow and juicy pulp. It is actually somewhat larger than all the other sugar melons and can reach a weight up to 3-4 kg. The taste is aromatic, sweet and delicious.
1 galia melon (about 1,75 kg/3,85 lb)
1 1/4 dl [0,25 pt] water
1 kg [2,2 lb] sugar
juice of 2 lemons
 Cut the melon in two, remove the shells and seeds and cut the flesh into large cubes. Weigh the pulp, this recipe is based on 1 1/2 kg/ 3,3 lb melon pulp.
 Boil the water and sugar and simmer for a few minutes. Add the melon cubes and lemon juice.
 Boil the jam at low heat for about 1 hour. Stir gently occasionally and remove any foam.
 Pull the pan away from the heat and stir in the preservative according to the instructions on the package.
 Spoon the jam into clean, warm glasses and close them immediately.
