Gaufres Bruxelloises - Brussels Waffles

Time: about 50 minutes.
4 servings

1 1/4 dl [0,25 pt] milk
10 g [0,35 oz] yeast
300 g [10,5 oz] flour
1/2 lemon
60 g [2 oz] butter
50 g [1,75 oz] sugar
2 eggs
1/4 teaspoon salt
4 tablespoons cream
Butter to brush the waffle iron
icing sugar

This is what you do

[1] Heat the milk to lukewarm and sprinkle the yeast into it. Leave it for about 2 minutes before stirring and then you stir in the flour. Leave the dough to rise for about 15 minutes.

[2] Grate the lemon peel. Melt the butter. Stir butter, sugar, eggs, salt, lemon peel and cream into the yeast dough making it light and airy and allow the rise for another 15 minutes.

[3] Heat and butter the waffle iron. Bake the waffles golden brown, sprinkle with icing sugar and serve the waffles completely fresh.
