Gourmet Sausages with Triple Topping

4 servings

4 sausages, wieners, frankfurters or similar to taste
4 hot dog buns
Pineapple Salsa:
2 tablespoon fresh pineapple, finely diced
1 teaspoon finely chopped red chilli
2 tablespoons crème fraîche orginal, 35%
rind and juice of 1/4 lime pieces
1/2 tsp salt
1/4 teaspoon pepper
1 tablespoon finely chopped fresh coriander
Cucumber majo:
2 tablespoons mayonnaise
2 tablespoons cucumber mix (mixed cucumber and
pickled ghurkins, very finely chopped
Avocado Cream:
1/2 avocado
1/2 dl [0,1 pt] crème fraîche orginal, 35%
1/4 red onion, finely chopped
1 garlic wedge, grated
juice of 1/2 lime
1/2 tsp salt
1/4 teaspoon pepper

This is what you do

[1] Fire up the grill so that it is hot and ready to grill the sausages.

[2] Make the pineapple salsa. Mix pineapple cubes and chopped chilli.

Note: Chili is normally pointed in shape and can vary in length, color and especially strength. Cut the chilli in half lengthwise, remove stem, seeds and partitions, and cut it into slices. Feel free to use disposable gloves when cleaning chili.

[3] Put creme fraîche in another bowl, and stir in the grated lime zest, lime juice and salt and pepper. Add the pineapple and chilli mixture to creme fraiche mixture and stir well. Add finely chopped fresh coriander.

[4] Mix mayonnaise and cucumbermix for the cucumber majo in another bowl.

[5] The final topping is an avocado cream. Cut the avocado into chunks and place in a bowl. Mash with a fork and add the creme fraiche and finely chopped red onion. Mix well.

[6] Grate the garlic fine with a small grater or use a garlic press. Add the garlic to the mixture along with lime juice, salt and pepper.

[7] Make a small cuts on each side of the sausages with a small pointed knife. This is to prevent the casing from rupturing. Grill the sausages on direct heat until they’re hot and has got a golden color, 2-3 minutes. Heat the hotdogbuns quickly on the grill.

[8] place the sausages in the buns and spread a little pineapple salsa, cucumber majo and avocado cream on each sausage.
