Grandma’s Oat Biscuits

1/2 kg [1,1 lb] oatmeal
1/2 kg [1,1 lb] flour
250 g [0,55 lb] butter
200 g [0,55 lb] sugar
2 teaspoons baking soda
5 dl [1 pt] milk


[1] Place the oatmeal in a mixing bowl and pour in the milk and melted butter. Leave it a while for the oatmeal to swell.

[2] Add the remaining ingredients and knead the mix to form a relatively hard dough.

[3] Let the dough stand cold for a few hours. This makes it easier to roll. Divide the dough into 4 pieces and roll them into suitable biscuit thickness. Use a glass to punsh out fine round biscuits

[4] Bake the biscuits in the center of the oven at 200 C / 390 F for 12-15 minutes. Check a few times  to see to it that they do not get burned. Once they are finished cool on a rack.

[5] Butter and our dark goat cheese is the traditional spread on biscuits like this here in Norway, but feel free to try blue cheese and honey as well or any other cheese combination for that matter.
