Hasselnut truffles taste delicious and is well suited for both
your Christmas coffee and for Christmas gifts.
2 dl [0,4 pt] hazelnuts
1 dl [0,2 pt] sunflower seeds
1 dl [0,2 pt] cranberries (preferably unsweetened)
1.5 tablespoons cocoa, good quality
2 tsp water
75 g [2,65 oz] dark chocolate, 70%
 Roast the hazelnuts in a dry and hot frying pan until the peel bursts and begins to turn black. Put the nuts in a kitchen towel and rub off most of the pell. Cool a little. Save 1 dl / 0,2 pt for garnishing.
 Run nuts and sunflower seeds in a kitchen machine until you get nice crumbs. Add cranberries, dates, cocoa and water. Mix together to make a nice consistency. Form the mass into small balls and place them on a dish.
 Finely chop the hazelnuts saved for garnishing. Melt the chocolate in the water bath. Roll the balls in the chocolate and then in the finely chopped nuts. Keep cool.
