Hiking Muffins


100 g [3,5 oz] plain flour
50 g [1,75 oz] wholemeal flour
½ teaspoon baking powder
A little salt
2.5 dl [0,5 pt] milk
3 eggs
1 red bell pepper cut into small cubes
4 frankfurters cut into pieces


[1] Mix together the flour, salt and milk in a bowl. Beat in eggs one at the time, beat until smooth between each adding. Fold in the pepper cubes.

[2] Grease muffin moulds, shop bought or homemade, with oil. Divide the batter between the moulds, and press one frankfurter piece into each muffin.

[3] Cook in the middle of the oven at 200° C / 390° F for about 20 minutes or until the muffins are ready.

[4] Put the muffins in your back pack, put on your jacket and head for the wild outdoors  😉
