Holiday Cake

Since our National Day is only four days away here in Norway
I thought it appropriate to post a holiday cake to day so
my Norwegian visitors had time to bake it

1 3/4 cups sifted flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped almonds
1/2 cup citron, cut fine
1/2 cup sultana raisins
1/2 cup butter or other shortening
1 cup sugar
3/4 cup shredded coconut
1/2 teaspoon vanilla
1/2 teaspoon almond extract
5 egg whites, stiffly beaten


[1] Sift flour once, measure, add baking powder and salt, and sift together three times. Sift 1/4 cup flour over almonds and fruits and mix thoroughly.

[2] Cream butter thoroughly, add sugar gradually, and cream together until light and fluffy. Add remaining flour to creamed mixture, a small amount at a time, beating after each addition until smooth.

[3] Add coconut, floured nuts and fruits, and flavorings. Fold in egg whites.

[4] Bake in greased, paper-lined loaf pan, 3x4x8 inches, in slow oven (250° F.) 1 hour and 30 minutes.

[5] Makes 1 1/4 pounds fruit cake. For larger cake, double recipe and bake in greased, paper-lined angel food pan 2 hours.
