Homemade Cajun Tortilla Chips

Oven bake flour tortilla into crunchy chips flavoured with traditional Louisiana spices and serve with dip.

2 tbsp oil
1 tbsp Cajun spice mix *
8 plain tortilla

* 2 teaspoons salt
2 teaspoons garlic powder
2 1/2 teaspoons paprika
1 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 1/4 teaspoons dried oregano
1 1/4 teaspoons dried thyme
1/2 teaspoon red pepper flakes (optional)

Stir together salt, garlic powder, paprika, black pepper, onion powder, cayenne pepper, oregano, thyme, and red pepper flakes until evenly blended. Store in an airtight container.


Heat oven to 180 C – 355 F /160 C – 320 F fan /gas 4. Mix the oil with the Cajun spice mix. Brush the spiced oil over tortillas, stacking the tortillas on top of each other as you go. Cut the stack into 8 wedges. Separate the wedges and evenly spread out on baking sheets and bake for 6-7 mins until golden and crisp.
